Dark plum fruits with a peppery nose

Palate
A richly flavoured palate with subtle tannins complimenting a backbone of toasted oak.
Matured in French and American Oak

Room temperature

Suggested Food
Red meats …Charcoal beef or Kan Chao Niu Ho Rice Ribbon Noodles with Beef in Oyster Sauce would suit the flavours of this wine well.

Aging
Rewarding now, it will develop greater richness and complexity over time.

on the Adelaide Plains in South Australia.

100% Cabernet Sauvignon

Colour
Deep ruby and purple.

Aroma
Blackcurrant and mint, with more than a hint of the aromas of our nearby olive grove.

Palate
Fresh and vibrant …just waiting to leap out of the bottle to show off it charms. A well integrated wine matured in French and American Oak barrels for over a year, leaving behind a touch of vanillin oak well married to soft tannins.

Suggested Food
An ideal partner for Pot Roast Meats, Black Olives and Pheasant Pate or hearty Poultry dishes. T his medium bodied, but opulent red wine would go well with Chiao Yan Pai Ku

It is a fresh fruity style for enjoying now.

100% Merlot

Colour
Vibrant rich crimson with a purple edge.

Aroma
Strawberry and Summer berries with a touch of Australian Eucalyptus.

Palate
Smooth and Soft … a medium bodied wine with fresh black cherry, juicy plum and ripe mulberry resting over spicy chocolate flavours.

Serving temperature to drink
Room temperature .... or in summer, very lightly cooled for accompanying hot spicy foods.

Suggested Food
Merlot’s soft tannins and velvety smooth finish suits traditional noodles, lamb or vegetarian dishes. Mongolian Lamb Mong Ku Yeung would be a good choice.

Aging
It is a wine for enjoying now or medium term cellaring > 2008/2009
